He came up with a plan to freeze ice cream by using liquid nitrogen, which means that a Sub Zero ice cream store requires no freezers.
Customers create their own custom mixes from a variety of cream bases and mix-ins, resulting in a wide variety of different flavor combinations. Think black raspberry and coconut with mixed berries, or caramel Amaretto with brownies. Once a customer has selected their custom mix, it is then flash-frozen in front of them with liquid nitrogen.
