As I promised you all in my earlier post about Coconut Coffee Chocolate Ice-Cream to share another coconut ice-cream, here I am again with my another stunningly nice and creamy coconut ice-cream.

Here comes some more coconut, some more berries and some more summer! All in all, an amazing flavored vegan ice-cream.

This vegan coconut blueberry ice-cream would sure steal a coconut lover’s heart, a berry lover’s heart, and of course an ICE-CREAM lover’s heart!

Basically, this is pretty much fun for everyone. Eat this ice-cream, lick this ice-cream, or even drink this ice-cream! Yes, I said drink this ice-cream!

Well, Little-A does that sometimes! In this picture here she is licking ice-cream, but soon she would let it fully melt and would start drinking from the cone itself! 😉

Then she says, “Mamma, look! Ice-cream shake, Nomnom! I like it so much”. Well, I think, liquid ice-cream is actually kind of an ice-cream shake.

I have also played this drinking ice-cream game with Little-A a couple of times, and I have to admit it was so much fun! 🙂 Sometimes becoming a kid is just all your heart desires!

It’s pretty fun to do something outside the norms, something unexpected by others! And drinking ice-cream is one such activity defying the norms 😉 So not just eat and lick your ice-cream — drink it too!

Believe it or not, I never did let Little-A eat ice-cream before she turned 3. And a couple of months ago, she turned 3. So she had her first cone in May 2015. I must say she was just mad about ice-cream, and it was an out of the world experience for her! And now when she has tasted the 8th wonder, she realizes how this awesome stuff has been missing from her life! 😉

Well, everyone is fond of ice-creams and I include myself and hubby in that. So I won’t blame her for liking ice-cream so much.

Now she just loves icy-cold ice-cream so much.

Recently I witnessed her conversation with her new favorite ‘Coconut ice cream’!

Little-A: “Coconut ice-cream, coconut ice cream, where are you?”

And ice-cream said: “Here I am, here I am. Come eat me!” 🙂

Haha, well! She plays both roles! With kids, anything is possible. 🙂

Let me tell you some more about this ice-cream.

This is VERY creamy!!! And I have one more advantage for you — this is breathtakingly easy to make.

I love coconuts, so this is one of my favorite vegan friendly desserts. Even if you are not much of a coconut fan, I think you will still love it. It has very sincere coconut flavor.

Wait, wait! This will only happen if you don’t have an ice-cream crazy family like mine! And if you can resist that ice-cream in freezer for a whole weekend – that means 2 long days. In this case, they would feel longer than usual. I am just saying! 😉

Here’s the procedure outline to make this tasty beauty!

Whisk coconut milk. Add coconut condensed milk and whisk again. Add vanilla extract and fold gently. Add blueberry sauce and fold gently. Freeze this blueberry beauty. Scoop in cones or cups. Attack!

I have no more ice-cream left. And just the thought of this rich, cold, creamy, classic, coconut ice cream is making me drool! Unfortunately, I don’t have any coconut milk left at home. And this thought of having this coconut ice-cream wouldn’t let me concentrate. So I will have to rush to the market to buy coconut milk as soon as I finish this writing!

Super Cold, classic, creamy ice cream on a hot summer day! Do you still need any more convincing to try this? I think not! Just go for it.

Let’s learn this simplistic and holistic ice-cream.

Do you love fruit flavoured frozen desserts? Then you would also love this strawberry kulfi.

Blend together blueberries and sugar in a blender or food processor. Blend until smooth. Pass it through a sieve through and set aside.

Remove water from chilled coconut milk (400 ml) and carefully scoop the cream into a mixing bowl.

Using an electric beater, whip up the coconut cream on high speed until it’s light and fluffy, 4-5 minutes.

Add the condensed coconut milk and whip on high speed for another 3-4 minutes.

Add vanilla extract and fold gently. Add blueberry sauce and gently swirl to create a marbled effect.

Transfer to a an airtight container and top with shredded coconut and chocolate chunks. Freeze for 4 hours or overnight.

Keep ice-cream at room temperature for 3-4 minutes, to make it easier to scoop. Serve in waffle cones or cups! Enjoy!
