We have been baking up a storm in our house, the latest being mini ice cream cups. With busy schedules, any type of baking we do needs to be quick and easy. My daughter always wants to help when we make anything, so I try to keep the baking easy enough for her to be involved. These super simple mini ice cream cookie cups are perfect or Easter!
Pillsbury pre-cut cookies are perfect for those times you want to spend a little time together making memories in the kitchen without getting flour on the ceiling. Pillsbury’s springtime sugar cookies are absolutely adorable.
We chose the cookies with little pink bunnies in the middle, because come on…they are bunnies. Who doesn’t love adorable bunnies around Easter time, or anytime?
Since our cookies were all ready to go, we decided to jazz it up a bit and make them into adorable mini ice cream cups. They are the perfect size to fit in little hands and the perfect portion size for adults. Ok, two or three are the perfect portion size for an adult.
How to Make Mini Ice Cream Cookie Cups
To make these mini ice cream cups you will need:
Pillsbury Bunny Shaped Sugar CookiesIce cream of your choicerainbow sprinklesmini cupcake pancookie dough scooper
To make the bowls just flip your mini cupcake pan upside down. Place 1 cookie on top of each cupcake tin. Bake according to the direction on the package.

Let the cookies cool completely. When they are cool, you can pull them off the mini-cupcake tin for the most adorable tiny easter themed bowl you’ve ever seen. My daughter squealed when we lifted them off with a “Awe… they’re so cute.”
When the cookie cups are cooled, scoop the ice cream into each cup.
Next, dip the ice cream in sprinkles. Ps. This was my daughter’s absolute favorite part. I can’t guarantee all the sprinkles ended up on the ice cream.
Since you want your ice cream bowls to last longer than 2 seconds or long enough for your guests (or eager kids) to see them on display, you will want to freeze them for a bit to hard them up. Simply, place the filled ice cream bowls in an airtight container, and place in the freezer until ready to serve.
When you are ready for the fun to begin, just place the cups on a cake platter and watch the eyes in the room light up. Especially when they see the hidden bunny on the bottom of the cookie cup.
