It seems summer is taking a break here in Berlin. You never know – the weather has been very unpredictable this year – maybe summer is coming back or is gone until next year 😉 But who cares – if there is no sun, we can think of it and make something delicious. For example: Popsicles with Skyr.

These popsicles are my first ice cream recipe here on the blog. Ever. I am a little bit excited ;)) Have you ever tried to take pictures of ice cream in the heat of summer (back then when I made them it was pretty hot in my apartment)? It’s a real challenge.

Anyways – I really like ice cream, but haven’t made it for the blog so far – not because there are not enough ideas. Nope. It’s more a technical thing 😉 I had an ice cream maker, but it broke several years ago and I never replaced it. No ice cream maker – no ice cream 😉 Basically. When popsicles popped up on every second blog some time ago, I also bought one of those forms to make them myself. Well – that thing ended up on a shelf and has never been touched ever since. Except when cleaning the kitchen ;P You may ask now “why?” Well – if you want to make ice the old-fashioned way you need space in the freezer. Something I barely have…

Some time ago I got asked by Arla, if want to be part of their campaign Nimm dir mehr vor* to create recipes with skyr and I was more than happy to do so… I don’t know how to pronounce “skyr” correctly, but many of you probably know that dairy product, right? Its origin is in/on Iceland. They do their little magic with the milk and the result is a product with almost no fat but lots of protein. Since I can get it here in Germany, I often use it in recipes to replace cream cheese and curd cheese. Works very well for me. So what is the connection with ice cream? Well… we are getting there soonish ;P

Since I am baking mostly sweet stuff, fatty stuff, skyr helps a bit to reduce calories, but still – by bakes are hardly suitable for the “healthy” section of a cookbook 😉 For this campaign, Arla asked to create recipes that are still low on fat and sugar. Not an easy task for someone like me… Anyways – I can do other stuff if I’m in the mood. In this case, I was definitely in the mood.

I got a package with different cups of skyr and thought about recipes I could do. Having in mind – go easy on the sugar and fat – I decided to go for the obvious: use the skyr pure as it is 😛 Well almost pure, I added some honey, berries and some granola, but that’s it. The cups have a fruit base and the skyr on top. If you eat it from the cup, you probably mix that layers – in my case I scratched off the skyr and kept the compote separately. This way you can use it again to create layers – this time in the popsicle form – together with the berries and granola. Wait several hours and you will have a delicious treat. Low on fat and high on protein – sorry it took a while to get to that point 🙂
