With all the parties and gathering this season, I’m always looking for a fun dessert to entertain kids of all ages. Cookies are the obvious choice for the holiday season and you can easily take them to the next level to create a dessert that will wow your kids and your guests.
One my favorite ways to use cookie dough is to make Ice Cream Cookie Cups. I mean, you really can’t go wrong when you combine cookies and ice cream. These are perfect for the holidays but you can really make these all year round. They would be great for kids’ birthday parties too.
It’s easy to grab a roll of Pillsbury Sugar Cookies in the frozen section at Walmart and make these at home within 20 minutes. Using the Pillsbury Sugar Cookies dough helps to save time so you can spend more of it with the people that really matter and give them all a customizable dessert that makes everyone feel jolly.

Ice Cream Cookie Cups
- 1 large roll of Pillsbury Sugar Cookies
- 1 to 2 cartons of ice cream
- 3 Tbsp. of mild olive oil
- Chocolate topping
- Caramel topping
- Whipped Cream
1. Slice your Pillsbury Sugar Cookies into 3/4 inch pieces and grease your pan with the olive oil. You can use cooking spray but since you can’t use a spatula to get these out I wanted to make sure that they did’t get stuck on the bottom in the cupcake pan. Rubbing olive oil into the creases seemed the safest way to go. As long as you use a mild one, it won’t alter the taste of the cookies. 2. Use a rolling pin to roll out each slice of cookie dough to flatten it a bit and create edges for the cup.
3. Using your fingers mold each piece into the cupcake spaces of the cupcake pan.
4. Bake at 350 for 11 minutes.
5. Pull them out of the oven and tap them lightly on the counter. The middles, which have begun to rise at this point, should fall. If they don’t use your fingers to push them down.
6. Put them back in the oven for about 4 minutes at 350. This is just a bit longer than the total suggested cooking time on the package. I’m generally a fan of soft cookies, but you want to make sure the bottoms of the cookies cups cook long enough to hold your ice cream and ensure the walls are strong enough to hold up once you take them out of the pan. 7. Remove from oven and using a knife carve around the cup portion of each cookie cup. Do not try to take them out yet. Leave to cool for about 15 minutes.
8. When ready to remove, turn the pan upside down and tap on each cupcake slot with a knife or spoon. They should come out easily this way.
Top with your favorite ice cream and topping and enjoy!
