How are ice cream rolls made?

Traditionally, it is spread on a really cold metal surface. Then the mixture is scraped into rolls.

You might hear this referred to as Thai rolled ice cream or stir fried ice cream.

We have an easy way to make this at home using a sheet pan. Keep reading to see how easy this is to make.

Ingredients

FOR THE BASE:

  • Heavy Cream. This needs to be cold.
  • Sweetened Condensed Milk
  • Salt

OPTIONAL TOPPINGS:

  • Sprinkles. Rainbow sprinkles look pretty. You can also use seasonal sprinkles to celebrate Valentine’s Day, Christmas and more.
  • Crushed Cookies. Oreo cookies, chocolate chip and sugar cookies are great options.
  • Crushed Candy. Use leftover candy to make delicious ice cream.
  • Caramel
  • Chocolate Chips. Try milk chocolate, dark chocolate or white chocolate.
  • Crushed Pretzels
  • Fresh Fruit. We love peaches, strawberries, pineapple and more.

How to make ice cream rolls:

  • First, whisk together the heavy cream, sweetened condensed milk and salt in a large bowl.
  • Next, pour the mixture into 2 sheet pans. These should be rimmed baking quarter sheet pans. You can also use 2 9X13 baking pans if you don’t have rimmed baking sheets.
  • It is amazing alone but you can add toppings if you prefer. Go ahead and add them now if using. Just sprinkle the toppings on top of the cream mixture in the sheet pan. You can use a spatula to mix the toppings through the mixture.
  • Then put the sheet pans in the freezer on a flat surface for 2 to 4 hours. The mixture needs to be completely frozen.
  • Next, put the ice cream serving bowls and the ice cream scraper in the freezer. Keep them in the freezer for 15 to 30 minutes. You will need to do this right before rolling so it does not melt.

How do you roll rolled ice cream?

  • It is time to roll the frozen cream mixture. Start by doing 1 pan at a time so it stays frozen. Place the pan with the longer side closer to you. Then work quickly as you do this.
  • Finally, get the sharp edge spatula from the freezer so you can cut it into 3 inch wide strips. Start at the bottom of the pan. Use the spatula to scrape the mixture up and roll it into strips as you scrape. Once it is rolled up, gently place the rolls into the serving bowls from the freezer.
  • Add your favorite toppings and enjoy.
