Five-Minute Strawberry Sherbet – The Wimpy Vegetarian

This easy strawberry sherbet is made in about 5 minutes with only 4 ingredients without an ice cream maker. You will, however, need a food processor.

The secret to this recipe is to start with frozen strawberries, and chill the food processor bowl and blade, and milk in the freezer an hour or two.

Strawberry sherbet is a super-easy and fast dessert to whip up for dessert. This of this anytime in the spring, for Easter, Mother’s Day, or any other spring get-together. It’s a guaranteed crowd-pleaser for all ages.

One of the best things about this recipe is I can now make sherbet just for me, or double it if my husband wants some. I don’t have to commit to an entire pint (or more).

Because no matter how much will power I can try to muster, I’m going to eat that whole pint if it’s in the house. Know what I’m saying?

Instructions

Step 1 (1 – 2 hours)

Chill everything. Throw the berries (if making this strawberry sherbet with fresh strawberries), the food processor bowl and blade, and milk into the freezer for 1 – 2 hours before making the sherbet. If you don’t, you’ll get a smoothie instead of sherbet. All good, but it won’t be sherbet.

Step 2 (4 minutes)

Place the frozen strawberries, sugar, lemon juice and a pinch of kosher salt in the bowl of the well-chilled bowl of the food process fitted with the chilled blade. Pulse the processor to chop up the strawberries. Then run constantly until almost, but not completely smooth.

Step 3 (1 minute)

With the food processor running, pour in the very cold milk through the feed tube. Blend until only just barely smooth. Serve immediately.

Step 4 (optional – 30 minutes)

This recipe makes a soft serve type of strawberry sherbet. If you prefer a firmer sherbet, return the sherbet to the freezer for 30 minutes. Give it a quick whirl in the processor and serve.
