Crafting Healthy Treats with Love
Every few years, I feel the urge to create adorable holiday treats. Now, I may not have the innate ability to make things look “cute,” but I certainly know how to make a wholesome and satisfying treat. Even if my creations end up a bit messy, my children always greet them with excitement and gratitude. To me, that makes it completely worth it.
For this year’s Valentine’s Day, I thought of making Heart-shaped Chocolate Covered Strawberry Ice Cream Bars. Aren’t they just adorable?
Similar to the Chocolate-Covered Apple Turkey Pops I made for Thanksgiving and the Strawberry Banana Santa Hats we whipped up for Christmas a few years ago, these bars may not be perfect in appearance, but they are undoubtedly a labor of love. Both of my kids absolutely adored them and were overjoyed to have homemade ice cream bars.
And you can do it too! Here’s how:
How to Make Homemade Chocolate Covered Strawberry Ice Cream Bars
Start with my recipe for Dairy-Free Strawberry Ice Cream. You don’t need an ice cream maker for this; all you need is a blender and a freezer! While it may not be as creamy as churned ice cream, it certainly hits the spot! Watch how easy it is in the video below.
After preparing your strawberry mixture, find a shallow pan to pour the homemade ice cream into, like this one.
Ensure that the strawberry mixture is evenly spread throughout the pan, with a desirable thickness of around 1 inch or slightly less.
Next, tightly cover the pan and allow it to freeze for approximately 3-4 hours.
Use a heart-shaped cookie cutter to create the bars and insert a wooden treat stick at the bottom. Place the bars on a cookie sheet lined with parchment paper, then transfer the tray to the freezer while you prepare the chocolate.
You can save any extra strawberry ice cream and enjoy it on its own as a delightful treat.
Meanwhile, using a double boiler, melt the chocolate and coconut oil together.
When the chocolate is nearly melted, remove it from the heat and stir until the remaining mixture is smooth and completely melted. Allow the chocolate to cool slightly.
Quickly dip the heart-shaped bars into the melted chocolate, using a spoon to help evenly coat the ice cream. Don’t worry if it’s not perfect. 😉
Use the spoon to smooth out the chocolate and place the bar back on the tray. Repeat this process until all the bars are fully coated. Return the tray to the freezer, allowing the chocolate to harden.
Transfer the bars to a freezer container for storage.
